Rainbow Slaw Salad

Ingredients
  • ¼ wedge of red cabbage
  • 1 stalk celery
  • ¼ wedge of white cabbage
  • 1 golden yellow beet, optional
  • 1 chioga beet, optional
  • 1 daikon radish
  • 1 large carrot
  • ¼ jicama
  • 1 green apple
  • 1 cucumber
  • 1 zucchini
  • Lemon juice
  • Poppy seed dressing
Instructions
  1. Cut up all vegetables and apple; combine in a large mixing bowl.
  2. Squeeze lemon juice over salad.
  3. Toss salad with Poppy Seed dressing. Serve.
