Greek Lemon Pepper Roasted Daikon

  • 1 large Daikon
  • Juice of one lemon
  • Lemon pepper to taste
  • Sea Salt
  1. Peel and cut Daikon into small cubes and boil for about 10 minutes until just tender. Drain in a colander and transfer to a sheet pan. While warm coat Daikon with lemon juice and toss with lemon pepper and salt. Bake at 350 for 30 minutes.
